So I became a vegetarian for a month. No biggie.
Times when this was hard: that time we went to Fuddruckers and I ordered an extra-large side of mashed potato, forgoing the main event.

Vegetarian-friendly recipes that make this an easy thing:
Tomato soup with grilled cheese croutons
Nectarine Pizza with Basil and Balsamic
Roasted Pear and Chocolate Chunk Scones
Peach, Tomato and Mozzarella Crostini,
Notice how the majority of these recipes contain cheese. Now, giving up cheese was another story entirely.

i love the idea of being vegetarian because i totally fall for the plant based diet and its benefits. but for some reason i'm starting whole 30 later this month...uhh..its weird.
I may not be a vegetarian, but tomato soup with grilled cheese croutons sounds amazing!

I agree - I probably could go vegetarian for a while but I wouldn't be able to forego the cheese!
Those recipes look sublime - have to try those grilled cheese croutons! We eat a lot of veggie food but I could never give up meat entirely xo
